Healthy Granola Bars



  My daughter requested that I get this recipe from a friend's mother. Turns out she found it on The Sisters Cafe. It is a great recipe and comes together quickly. I have substituted the peanutbutter for almond butter with great results.
Healthy Granola Bars
2 cups old-fashioned oats
1/2 c. flax seed, milled
1/4 c. quinoa
3/4 c. shelled sunflower seeds
1 c. chopped nuts (any kind or combination)
1 c. shredded coconut
1/2 to 1 tsp. cinnamon (desired amount)
1/2 tsp. salt
1/2 c. brown sugar or organic agave nectar
1/2 c. honey
2 tsp. molasses
4 T. butter
2 tsp. vanilla
4 T. peanut butter (we used a scant 1/2 cup)
1 c. dried, chopped fruit (optional) (We used craisins and raisins)
1. mix first 8 ingredients together and place on a rimmed baking sheet. toast in a 400 degree oven for 12 minutes. stir and let cool at least 15 minutes.
2. bring next 4 ingredients to a simmer, stirring continuously. stir in the vanilla and peanut butter and cool for 2-3 minutes, stirring occasionally.
3. put the toasted ingredients and dried fruit in a large bowl and pour the liquid ingredients over it. mix very well.
4. place parchment or wax paper in the rimmed baking sheet and butter the top side, then place the granola bar mixture in the pan. put another butter sheet of paper, buttered side down, on top of the mixture and press down. roll with a rolling pin to make it very tight, smooth, and even.
5. let set for 2-3 hours and cut into desired bar size. makes about 20-24 bars. package in snack size bags or an airtight container. if not using within next few days, store in freezer. they keep very well, and thaw quickly. (really yummy frozen, too!)

Chewy Peanut Butter Popcorn


This is my last sweet treat, well at least for now. It was definitely worth trying. It is a great change of pace from caramel popcorn .


Chewy Peanut Butter Popcorn from The Double Dipped Life
(Printable Version)
Makes: 3 Qts of popcorn!

1/2 cup unpopped popcorn, or 2 bags microwave popcorn
1 cup sugar
1/2 cup honey
1/2 cup light corn syrup
1 cup peanut butter (crunchy is best!)
1 teas. Vanilla

*I use a disposable turkey pan for making popcorn. You can get them at the Dollar Store for $1.00. Otherwise, use 1 very large bowl, or 2 large bowls.

**Another hint: have your peanut butter and vanilla measured out before you start the mixture boiling!

Pop the popcorn, and place in a large bowl. Remove kernels.

Butter sides of a large 1 1/2 qt saucepan. Combine sugar, honey, and corn syrup in pan. Bring mixture to a boil, stirring constantly! Boil hard for 2 minutes, without stirring. Remove from heat.

Stir in Peanut Butter and vanilla until melted.

Immediately pour over popcorn mixture, stirring to coat well. Cool; break into bite size pieces.

***Chocolate drizzled over the top of the popcorn is awesome. Melt some chocolate chips in the microwave and spoon over the peanut butter popcorn.

Christmas Treat Idea





This treat idea can be used with any "Chex Mix Recipe " that you choose, I decided on a sweet version.........Thanks to my sister Doree for such a great idea!!
























T.V. Mix ..”Sweet Chex Mix”
1 bag of M&andM’s (Plain or Peanut)
½ box of Rice Chex
½ box of Corn Chex or Crispix
1 small bag of slivered almonds
2 C. Shredded Coconut
¾ C. Butter
1 C. Sugar
1 C. Corn Syrup
Combine butter, sugar and corn syrup in a saucepan. Bring to a boil and continue cooking for 3 minutes.
While the syrup is cooking pour cereals , coconut and almonds on a large bowl and toss to distribute. Pour the cooked syrup over the cereal mixture and stir until well coated , let cool for 10 minutes and then toss the m&m’s into the cereal mix……… Enjoy

Stacy's Marshmallow Caramel Popcorn




MARSHMALLOW CARAMEL CORN

2 cube butter (1 Cup)
1 c. brown sugar
1 (10 oz.) pkg. marshmallows ( 3/4 of a 16 oz bag of miniture marshmallows)
2 batches of airpopped popcorn( Haven uses 3 1/2 bags of microwave popcorn popped)

Melt butter and sugar. Stir to dissolve. Dissolve marshmallows in mixture over medium heat. Stir until marshmallows are completely melted and brown sugar mixture is completely incorporated with the melted marshmallows. Pour over popped corn and mix thoroughly.You can add holiday colored sprinkles or m&ms or gumdrops......enjoy!!

Gooey Caramel Popcorn

2 batches of Hot Air Popcorn popped

Bring to a boil the following :
2 C brown Sugar
1/2 C. Butter
1 C. White Karo Syrup

Add 1 can of sweetened condensed milk. Cook on medium for approx. 5 minutes. Add 1 teaspoon of vanilla and stir over popcorn . You can add M & Ms and candycorn into to it too if you like

Caramel Corn

1 1/2 C. Brown Sugar
1 C. Light Corn Syrup
1 1/2 C. butter

Cook over medium heat bringing to a boil for 3 minutes and pour over 2 large bowls of popcorn.

INGREDIENTS:
2 cups crispy corn cereal squares (corn chex)
2 cups small pretzel twists
1 cup dry-roasted peanuts
20 caramels, unwrapped and coarsely
chopped
1 (11.5 ounce) package NESTLE® TOLL HOUSE® Milk Chocolate Morsels

DIRECTIONS:
1.COAT 13 x 9-inch baking pan with nonstick cooking spray.
2.COMBINE cereal, pretzels, peanuts and caramels in large bowl.
3.MICROWAVE morsels in medium microwave-safe bowl on MEDIUM-HIGH (70 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Pour over cereal mixture; stir to coat evenly.
4.
SPREAD mixture in prepared baking pan; cool for 30 to 45 minutes or until firm. Break into bite-size pieces.

Caramel Corn Snack Mix

Caramel Corn Snack Mix

INGREDIENTS:
8 cups popped popcorn
4 cups crispy rice cereal squares (RICE CHEX)
2 cups small pretzel twists
1 cup pecan halves
1 cup packed brown sugar
1/2 cup butter
1/4 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda

DIRECTIONS:
1.Preheat oven to 300 degrees F (150 degrees C).
2.In a large bowl, combine the popcorn, cereal, pretzels and pecans.
3.In a saucepan over medium heat, combine the brown sugar, butter and corn syrup. Cook and stir until mixture comes to a boil. Reduce heat to medium low; cook without stirring for 5 minutes.
4.Remove saucepan from heat and stir in vanilla and baking soda. Pour over popcorn mixture and toss until evenly coated.
5.Bake at 300 degrees F (150 degrees F) for 30 minutes, stirring after 15 minutes. Transfer to large piece of parchment paper and cool completely. Break into chunks once cool.
